I actually like to substitute the coconut palm sugar with Yacon Syrup because Yacon Syrup is a naturally occurring sweetener that has glycemic index of 1. It has kind of a malty flavor, but this really enhances the desserts or beverages' flavor. It's a great substitute, especially for those that need to watch their sugar intake.

Lucuma Eggnog
This recipe is absolutely perfect for fall and the colder months of the year. Lucuma adds a rich caramel flavor, and the coconut sugar and vanilla powder round out the recipe. Ingredients:
1/2 cup lucuma powder
11/2 cups almond milk
1/2 tsp vanilla powder
3 Tbsp coconut palm sugar
1/4 tsp nutmeg + 1/4 tsp for garnish
1 tsp chia seeds, ground into powder
dash of Kalahari or Himalayan Salt
Combine all ingredients into high speed blender. Adjust flavors as necessary and place in fridge to set for 15 minutes. Garnish with ground nutmeg and serve!
